Spring Into Anna’s

We did it, Michigander’s, we’ve made it to March! While this doesn’t necessarily mean we’re going to be getting the warmer, brighter weather we’ve all been craving (we know, we’re disappointed too), it does mean that we’re bringing in some delicious new menu items to wake your taste buds up from the winter blues! This round, we’re focusing on light, refreshing flavors, superfoods with tons of health benefits, & beautiful pops of color. Even if there’s still some snow on the ground (ugh) we’ve got plenty of reasons to celebrate the up & coming springtime. So without further ado, let’s get to know our newest dishes!

Raspberry Chia Seed Pudding

Great things come in small packages. Chia seeds come from the Salvia hispanica plant, which is a close relative to mint. These little seeds are incredibly rich in protein, fiber, & antioxidants. Besides being tiny nutritional powerhouses, chia seeds can help to lower risk of heart disease, reduce blood sugar levels, & calm chronic inflammation.

When added to liquid, chia seeds become gelatinous, & take on a consistency similar to tapioca pudding (These little guys can actually absorb up to ten times their weight!). We soaked our chia seeds in creamy coconut milk, with a splash of vanilla, & a touch of maple syrup. Layered with a tart raspberry purée & topped with toasted coconut, sliced almonds, & a raspberry. This beautiful little dish is dairy free, gluten free, & vegan. It’s the perfect balance of indulgent & healthy!

Smoked Salmon Frittata

Of course, we had to do a twist on an iconic brunch dish. This vibrant frittata is loaded up with strips of smoked salmon, robust sun-dried tomatoes, & tangy goat cheese. Accented with flavors of fresh dill, tart capers, & crisp green onion, this dish is a smorgasbord of smokey & savory, with a hint of tartness.

Now we all know salmon & eggs are of course great sources of protein, but did you know that salmon is an excellent source of omega 3 fatty acid (This helps with brain health, promotes healthy skin, & increases heart function) & vitamin B (A complex vitamin that’s essentially a one stop healthy body shop). On top of that, dill & capers are unexpected sources of goodness as well! Dill is packed with one hundred & fifty percent of your daily allowance of vitamin A (Yay healthy eye sight!) & assists in the digestion process; Whereas capers help fight anemia & keep your bones strong. Served with a house-made cucumber salad this amazing concoction of superfoods is gluten free, & a surefire way to reinvigorate your brunch!

Lemon Ricotta Pancakes

Let’s move into  something a little more decadent on the menu. Don’t be fooled, these blonde beauties are made with some surprisingly healthy ingredients! Our Lemon Ricotta Pancakes are made with fresh squeezed lemon juice, creamy ricotta cheese, & of course, finished off with plenty of lemon zest. Topped with our house-made Earl Grey whipped cream & served with a side of real maple syrup, these fluffy treats are gluten free, & vegetarian.

Lemon juice is best known as an incredible source of vitamin C (a quarter cup contains thirty one percent of your daily dose), but it has also been proven to clear skin, prevent kidney stones, & even aid in digestion.  Now we know what you’re thinking, “how can ricotta cheese have any sort of health benefit?” well dear reader, we’re here to tell you ricotta cheese does indeed have some amazing qualities to it. This mild cheese contains 14 grams of protein, has twenty five percent of your daily calcium intake, & is low in sodium.

Carrot Ginger Soup

While we may be moving out of soup season, we couldn’t pass up the opportunity to mix things up, & create something refreshing! This smooth blend of fresh carrots, sweet ginger, & orange zest is the perfect mild weather soup (& just look at that beautiful color!). Served with a side of grilled ciabatta bread & topped with fresh cilantro & ground black pepper, this vegan, dairy free, & gluten free soup is the perfect way to unthaw yourself from winter!

Orange must be the color of health, because there’s a lot of really good stuff packed into this bowl of soup! While carrot’s tried & true health benefit is being chockfull of vitamin A, they’re also a great source of fiber, & potassium. These amazing little root vegetables have also been found to help kill leukemia cells & help control blood pressure! Along side carrots, fresh squeezed orange juice brings a heaping helping of vitamin C (keeps your immune system strong)  & helps lower blood sugar levels. Finally finishing off this bowl of goodness is ginger. Ginger contains a chemical called gingerol (we promise it’s a real thing), which has been used to help everything from inflammation to morning sickness.

Raspberry Créme Cold Brew

We’re finally moving into the season where it’s acceptable to drink cold beverages again (or at least we hope we are), & we’re kicking it off with our Raspberry Crème Cold Brew Coffee! Made fresh from coffee provided by our friends at Rowsters, tart raspberry purée, & sweet cream, it’s the perfect blend of smooth, sweet, & sour.

Coffee lovers, rejoice! Cold brew coffee actually has some really great health perks to it. Because of the heating process, hot coffee has a higher acid content to it than cold brew. Which means when you opt for cold brew, you have less of a chance of heart burn, acid reflux, & indigestion. Cold brew is also super high in antioxidants, & thanks to the steeping method, a lot of them stick around to help fight off diseases, & help fight aging. Just another reason to love coffee (as if we needed one).

Fresh Pressed Celery Juice

You can’t start a fresh new season, without a fresh new juice! Introducing our house-made celery juice, made with crisp celery, sweet golden delicious apples, & tangy lemon.

You wouldn’t guess it upon first glance, but celery is kind of a hidden gem of health benefits. While it’s known for being low in calories, it’s incredibly high in fiber, vitamin A & helps with hydration (especially considering celery is 95% water). Celery can also help regulate the PH balance of your body, aid in digestion, & assist in weight loss. It’s definitely the underdog of veggies, that’s for sure.
